Bacon & Egg Snackwich Recipe
A pressed toasted sandwich filled with basil pesto, melted cheddar cheese, crispy bacon and scrambled eggs.
What was your go-to childhood snackwhich combo?
If you grew up in Joburg like I did I'm sure you have a snackwich story. In fact I'm pretty sure I remember having them during the school holidays in KZN too.
They were usually pretty simple some Rama & grated gouda (that soft melty wedge with the red wax wrap on the outside) in-between two slices of government loaf.
We had a cream coloured cast iron looking snackwich which I may have broken by accidentally getting the electrical cord stuck in the hot press.
Fast forward to when we bought our house- I found the exact one left behind in the old kitchen cupboards, I was delighted- it seemed like a good omen.
Luckily, for this shoot we used a lekker fresh Snackwich machine From Swan. Here is my first recipe of the series. I worked on this recipe series with Angie Batis Durrant (@miss_luckypony)
Inspired by breakfast with a friend at the coffee shop up the road after a Sunday long run. They have a breakfast bun that is something like this. My friend asked for the pesto.
Basil Pesto, cheddar, scrambled eggs with feta and bacon
2 Tbsp Basil Pesto - I often use Pesto Princess. I recently tried their lemon basil pesto because Farm Table didn't have the original & it was pretty good.
A handful Feta cheese crumbled
2 scrambled eggs, cooked
1/4 cup grated cheddar cheese
4-6 slices streaky bacon
I like to cook my bacon in the air fryer
Butter or olive oil to spread onto the bread
Spread butter or olive oil on each side of bread
Put a slice of bread into your snackwhich maker
Layer the pesto, crumbled feta cheese, scrambles eggs, grated cheddar & bacon
Season with salt and pepper- remember the feta will add some salt too
Add a slice of bread on top
Toast until golden brown and crispy
