Chicken Kabab Chutney & Roti with Poetry

Served with Roti, Pickled Carrot Salad, Raita & Atchar

Serves 4

For the Chicken Kebabs,

500g Chicken mince
1 tsp ground coriander
1 tsp ground cumin
2 tsp salt
1 tsp kashmiri chilli
1/2 tsp ground turmeric
1⁄2 tsp onion powder
1⁄2 tsp garlic powder
a handful fresh coriander, roughly chopped a handful fresh mint leaves, roughly chopped

Combine the ingredients with a spatula. Divide the mixture into 10-12 equal sized balls and shape with the palms of your hands into sausages or balls.
Grill in a pan or in the oven for 10-15 minutes or until the chicken is cooked.

Chef tip: You can cook these kababs on the Braai or shape them for burgers.

For the Kebab Spice Sprinkle 2 Tbsp flaky sea salt
2 Tbsp cumin seed, toasted
2 Tbsp fennel seed toasted

2 Tbsp coriander seed toasted

Grind the spices and the flaky sea salt in a pestle and mortar.
Once the kebabs are cooked sprinkle the spice mixture on top before serving.

For the Cherry Tomato & Chilli Oil Chutney

1 small onion, chopped
2 tsp freshly crushed garlic

1-2 sprigs of fresh curry leaf 1 tsp cumin seeds
1⁄2 tsp ground turmeric 500g cherry tomatoes Season with salt

Heat a splash of Chilli oil in a large saucepan, sauté the onions, garlic, curry leaf and cumin seeds then add the turmeric and cherry tomatoes. Add chilli oil according to your taste. Season with salt.

For the Pickled Carrot Salad 1 cup grated carrots
4 small radish, thinly sliced 1⁄4 red onion red onion sliced 1⁄2 cup mung bean sprouts

a splash of fresh lime juice, olive oil and salt

Combine the ingredients in a salad bowl for serving

For the Raita
1⁄2 cup buttermilk
1⁄2 cup yoghurt
1-2 fresh green chillies
a handful fresh mint leaves a handful fresh coriander 1⁄4 tsp onion powder
1⁄4 tsp garlic powder
salt

Combine the ingredients with a hand blender until smooth

Serve with Roti Atchar

Arrange the kebabs on top of the cherry tomato chutney, serve with all the sides. This meal is a feast meant to be shared.
